How to Make Puerto Rican Cilantro Rice

Hola! Today we delve a bit into Spanish Cuisine, Puerto Rican cuisine to be exact. Puerto Rico has a rich history, in fact, the words “Puerto Rico” in English translate to “rich port”. Located on the continent of North America, between the Caribbean Sea and the North Atlantic Ocean, Puerto Rico was inhabited by indigenous people, namely the Tainos until it was colonized by the Spaniards. Today, Puerto Rico is owned by the United States and citizens since 1917 can move freely between the island and the mainland.

Like its rich history, Puerto Rico has a rich culture influenced by the Taino Indians, Spanish and African cultures. The cuisine is a rich part of Puerto Rican culture, there are a variety of Puerto Rican dishes such as Mofongo, Tostones and Arroz con Gandules, which pretty much consist of plantains or rice.

One popular Puerto Rican rice-based dish is Cilantro Rice, which is usually prepared with lime or peppers. Cilantro Rice a traditional dish in Puerto Rico which may be enjoyed anytime, but more so in the summer alongside grilled shrimp kabobs.

 1 small onion, finely chopped
 1 small sweet yellow pepper, finely chopped
 1 small sweet red pepper, finely chopped
 2 garlic cloves, minced
 1 tbsp olive oil
 2 cups water
 1 cup uncooked long grain rice
 ¾ tsp salt
 ¼ tsp pepper
 2 tbsp minced fresh cilantro

In a large saucepan, sauté the onion, peppers and garlic in oil until crisp-tender.

. Add the water, rice, salt and pepper.

Bring to a boil. Reduce heat; cover and simmer until rice is tender, 18-22 minutes.

Remove from the heat; fluff with a fork. Stir in cilantro.
