Vegetables — while they may not be the go-to food source for some, they sure are healthy, and we should always try to incorporate them into our diet. Many vegetables are delicious and add color and flavor to our meals, like lettuce, carrots and cucumbers. Some vegetables even make delicious drinks.
Here are five vegetables that you can try juicing, in addition to eating.
Carrot juice is a favorite among many Caribbean nationals. Tossed in a blender or grated and then strained to get rid of the trash, carrot juice can be sweetened with sugar and served chilled or mixed with ginger, or as many like it, with milk, nutmeg and sugar. Carrot juice is often served with the traditional Jamaican rice and peas dish on Sundays. The drink is not only tasty, but healthy, as carrots are a good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants. Carrots are also good for eye health.
Beetroot is another vegetable that makes a delicious drink. Many people don’t like the taste of the vegetable on its own and prefer to blend it to make a smoothie. Beet is a tuber that has a rich burgundy color, and if you cut the vegetable, you would notice the color on your hands and utensils. Fortunately, it does not stain and comes right off if you wash your hands with water. Beet drink can be made in a similar way as carrot juice: washed, cubed and grated, or blended. Beet can be sweetened with sugar alone or milk and sugar and nutmeg may be added. Additionally, in some Jamaican households, beets and carrots are combined to make a superbly delicious drink. Beetroot is a great source of fiber, vitamins B9 and C, manganese, potassium and iron. Beetroots also improve blood flow and lower blood pressure.
A favorite of many, Cucumber juice is very refreshing and is perfect on a warm day. To prepare a cucumber drink, you simply wash the cucumbers and cut them into blend-size pieces, along with ginger root – the amount of ginger you use is up to you. You then blend the ingredients and strain to remove bulk particles, then sweeten with sugar and allow to chill in the refrigerator. There is an ongoing debate about whether a pumpkin is a fruit or a vegetable. If you ask a botanist, they will tell you pumpkin is a fruit, but if you speak to a chef, they will tell you pumpkin is a vegetable, well, this is what I say, pumpkin is a vegetable and makes a very delicious drink. The pumpkin is washed, cut, cubed, blended and sweetened with milk, sugar, and spices such as vanilla, nutmeg and cinnamon.
